Since we last spoke with local chocolatier Audrey Brown, CocoaBistro has taken off. What began as an online business based out of Audrey’s home has moved into its own storefront and kitchen on Development Drive where she now makes all of her chocolates in-house. You can drop by and pick up a piece or two but CocoaBistro has found its niche with custom orders and wildly imaginative flavours. CocoaBistro chocolates are made with a pure Belgian chocolate foundation made with Belgian Callebaut chocolate purchased locally from Tara Natural Foods and confections made with dairy products from Limestone Organic Creamery—but beyond that, if you can dream it, she can turn it into a mouthwatering flavour.
“The flavours that I once thought would be really experimental have ended up being the ones that people seek out,” she says. “My personal favourite is the Limoncello Basil, which combines Limoncello liqueur with fresh basil. Wasabi and Smoky Vanilla are two of my newest favourites.”
While she is a master of classic chocolate flavours, Audrey isn’t afraid to get experimental, either, “I’ve also created a variety of recipes based on different cultures: tamarind and chili in a recipe that represented Mexico, and chocolates with matcha green tea for Japan. I even created my own version of a Ferrero Rocher called ‘Nuts ‘Bout U’. I cannot keep that flavour in stock; everybody loves it.”
